Brasserie Supervisor

My client are a Melton Mowbray based luxury 4* spa hotel who are looking for an enthusiastic and energetic Brasserie Supervisor to join them on a full time, permanent basis, working 39 hours per week on a rota basis between the hours of 8am and 11pm (including weekend working), paying £19,590 per annum, plus around £900 bonus p/annum to be paid quarterly.

NO SPLIT SHIFTS.

You will be working as required in one of the hotel's two cafe bar and lounge areas, both of which are open to guests daily between 9am and 11pm and serve great quality food and drink in welcoming and relaxed environments.

The role is varied but main duties will be:

  • To assist the Bar Managers with the day to day operation of both bar areas
  • To lead the team by example in the absence of the Bar Managers
  • To support the Bar Managers to maintain and improve high service levels
  • To motivate and encourage development within the bars team
  • To make and serve hot and cold drinks, smoothies and juices
  • To clear tables and ensure that the bar and lounge areas are clean, tidy and well-stocked 
  • To be knowledgeable on all food offers, and to take orders for preparation by the chef 
  • To handle and deal with any customer complaints and resolve situations as efficiently as possible 
  • Coordinating PR event preparation and staffing requirements, liaising with the Bar Manager, Marketing and Head Chef as appropriate 
  • Ensuring weekly rotas are fully staffed, monitoring in advance any shortages (or excess) of staffing for financial control, liaising with Bars Manager in foreseeing potential problem days
  • Assisting with staff reviews and appraisals
  • Liaising with the duty Senior Chef ensuring sufficient supplies of cleaning materials and required stocks are available 
  • Ordering correct levels of bar stock; following correct procedures for all deliveries and invoice recording and processing for the accounts department 
  • Following up and rectifying any billing errors to assist the bar in generating maximum profitability and revenue 

In order to be considered for the role you must  have experience of supervising a team within a customer service environment, be 18 years of age or older (due to serving of alcohol), and you will need to be a driver with access to your own vehicle in order to access the hotel (unless based within Melton centre, or Asfordby in which case you can access the company's transport to and from work).
