Head of Catering

This is an ideal role if you are an experienced but career-oriented caterer with large single site or multi-site operating experience in building and delivering quality customer experiences.

JT Recruit are working in partnership with a Local Authority in Derby to find the perfect Head of Catering initially on a short term contract with an immediate start available.


Overview of Role

Reporting to the Head of Service you will lead the Catering team in the delivery and management of catering provisions across multiple sites. On a day-to-day basis you will manage the catering services with a high degree of customer care and service at all times. The role will be pivotal in facilitating our objectives of safety, menu and technical innovation, customer service and best possible commerciality.

Fundamentally the role will contain a mix of strategic and tactical elements, Strategically, the HoC will develop options and business cases for future operations, investment and development of the service. Improving and future proofing the day-to-day service and offers and to find bespoke solutions for events and other opportunities within the estate. The HoC will use demographics and research user base of each facility to develop sales, products, events and offers that will lead to opportunities to drive increased uptake. Tactically, the role will take responsibility for day-to-day service delivery, managing and empowering the assistant catering managers and supervisors in terms of compliance, quality and customer service.

It is an important part of the role to manage, support and develop the look and feel and customer journeys for each food service operation within your sphere of responsibility.

The HoC will ensure responsive, well-motivated and customer-focused staff to ensure the provision of excellent catering services to all customers.

This role will involve managing the catering team through the differing seasonality’s and one-off events and will require hands on leadership and excellent interpersonal skills in working with other DCC stakeholders, clients and the general public.

This key leadership and customer facing role will be critical to ensuring that the client, their teams and all customers are satisfied with the services provided by the catering team

This role will include a variety of tasks including the following:

Managing all day-to-day services in scope consistently to the agreed standards

Developing a compliance culture to all relevant legal responsibilities (food safety, health and safety and licensing law) and DCC processes and procedures

Assuring that staff resources are available, flexible and robust enough to effectively cover the peaks and troughs whilst remaining controlled and commercially viable

Developing the customer journey for the outlets and investigating how investing in brands/ strategic partners may offer service improvements and additional profitability

Assuring the security of all aspects of income generated by the service

Looking for new business models and developing potential profitable new income streams

Developing the appropriate supply chain options within DCC umbrella to develop the food offer and securing full compliance to agreed supply chain

Project managing one off events, liaising with all DCC stakeholders and assuring profitable, deliverable solutions.


Qualifications and Experience

Degree or equivalent in Hospitality/ Hotel management


Significant and successful multi-site experience at a management level within a concessions / commercial catering environment

Track record in effective leadership and communication in a complicated multi stakeholder environment

Significant demonstrable experience within a 4* catering environment catering for small and large customer numbers

Knowledge and achievement of building a sustainable compliance culture in health & safety, food safety and HACCP and licensing.

Proven ability to deliver strategic agenda, following ideas through research and evaluation, through to business case and stakeholder onboarding

Strong commercial understanding and demonstrable track record

Skilled communicator within a multi-tier set of stakeholders

Blue chip concessions catering leadership experience


Good communication skills, both verbal and written, and ability to communicate with all hierarchical levels of stakeholder

Good people management skills that inspire respect and confidence

Strong commercial skills managing P&Ls and end to end investment projects

Excellent customer service skills and focus

Ability to maintain/foster excellent relationships with council stakeholders, clients and team members

Flexible/supportive team player

Good knowledge of modern / on trend menu content, food production methods and procedures

Self-motivated and ability to adapt to a changing environment
